I made this evening with a few tweaks: i dry brined the duck for 24 hours beforehand, and i used cranberries, cherries, figs, and prunes in redxn. I also cooked on low T for over 3 hours. It was forgiving and spectacular. One could modify in so many ways! Liked the flexible timing, and that it kept tender and moist, and flavorful. I saved the sieved fruit and garlic as a sandwich condiment the next day sounds creepy, but was delicious.
